These are incredibly delicious and super light, so perfect for warmer days when you don’t want anything too stodgy, but are also great for anyone who is looking to manage their weight. Not only are they packed with nutrition, but a serving of each one is less than 250 calories.
They all use our latest Brilliant Base, our Savoury Starter. Jason has devised this so it can be made pretty easily and then spun off into different recipes just like all our other bases – and moving forward we’ll have many more uses for this one too.
It basically consists of onions, garlic, herbs and our either our Bone Marrow Broth Brilliant Base or our Roast Root Vegetable Stock (for our vegan friends) and the ingredients mean its packed with antioxidants too.
In this recipe, we are taking our Savoury Starter, packed with nutrition and antioxidants and using it to create a classic Vichyssoise soup – a chilled leak and potato soup, perfect for a starter or a summer lunch.
The main ingredients here are, of course, those potatoes and the leeks. Potatoes get a bad rap sometimes in nutritional circles but they are high in vitamins B6 for energy and C which helps with immune function, as well as important minerals such as potassium, plus lots of fibre. The nutrition here is mainly in the skins, which is why we don’t peel them in the recipe.
Leeks have many of the same benefits as the onions and garlic that are in the starter – so good for cholesterol, immune function, and they can also have anti-cancer properties.
Our Elevated Gazpacho adds rich red peppers and tomatoes to our Savoury Starter. Both of these ingredients contain high amounts of vitamin C – half a cup of red peppers is 1.5 times your daily recommended amount – so great for boosting the immune system, while red peppers are also high in vitamin A that can help with skin and eye health.
The Jerez sherry vinegar that’s included here, meanwhile, offers depth of flavour and has been shown to raise ‘good’ cholesterol (HDL) and lower blood sugar.
This chilled soup uses our Savoury Starter and marries it with ingredients on the yellow spectrum to produce an amber soup thanks to the inclusion of frozen sweet corn, honeydew melon and yellow grapefruit.
Corn in a fine source of B vitamins, vital for turning food into energy, as well as vitamin C and minerals such as magnesium. Honeydew melon is also a good source of vitamin C and potassium, while grapefruit is also high in vitamin C and pectins, a plant substance that can help with cholesterol levels. Moreover, we’re adding some anti-inflammatory spices in this one too.
If you’re noticing a bit of a traffic light theme here, you’d be right – you know how we like to encourage people to eat a rainbow of vegetables after all.
This delicious chilled green soup has been created by Jason to give a really fresh feel for summer. Here the Savoury Starter is married with cucumber, peas and mint that make it zing with flavour but also up the nutritional ante.
Cucumber is an excellent source of a trace mineral called silica that helps with the strength of all our connective tissues like muscles and ligaments, while peas are high in protein for a vegetable, as well as being a good source of B vitamins and minerals such as magnesium, potassium and iron.
Mint, meanwhile, has antioxidants that give it anti-cancer properties, but is also an antispasmodic, so good for relaxing the gastrointestinal tract.
