For our update of healthy recipes, this time we’re focussing on aubergines (or eggplants as our American friends will know them).
Packed with fibre, vitamins and minerals, and some very special antioxidants, you can learn all about aubergines in our guide.
First up, is our Parmigiana di Melanzane recipe. This great warming bake is based on a traditional version of the classic dish created in Bari. It marries fibre- and antioxidant-rich aubergines with our nutrition-packed Tomato Fondue Brilliant Base and Parmesan cheese which can help with good bacteria for the gut.
For both our vegan and non-vegan friends, here’s a great vegan option to a traditional steak. Made with our hero vegetable the aubergine/eggplant, these are thick, succulent and meaty, while being packed with fibre and antioxidants. We serve them with a simple salad and our vegan creamy dressing from last summer to create an amazing family dish

The other is our Elevated caponata. This simple Italian stew is inspired by Jason’s time working at the Piccolino restaurant group, in turn influenced by the great Italian chef Antonio Carluccio. It can be used as an accompaniment to grilled prawns, chicken or fish – and if you have some left over, it can be stored and used as a relish. Simple and delicious.
