In the December Premium edition of Elevated…

Christmas is around the corner, a time when we traditionally indulge perhaps a little too much – and why not?

After the year we’ve had in 2020, we all deserve a bit of a break and, in all honesty, it’s not what you eat in the week between Christmas Day and New Year’s Day that matters, but what we eat and do in the other 51 weeks.

With that in mind, we’ve come up with our usual selection of Elevated classics this month, alongside a couple of dessert choices, one a little more indulgent than the other, so you can spoil yourselves a bit in the run up to the big day.

We talk a lot about fats, protein and carbohydrates when it comes to nutrition – but some of the language can be confusing. To get you thinking about that a little bit in advance of the inevitable New Year fitness kick, James has put together an article this month on where we get our energy from. Brilliant Base: Bone Marrow Broth

This month’s Brilliant Base comes in the form of a bone marrow broth – great for use as a stock for various recipes, but also for healing the gut. Traditionally, recipes just involve throwing some bones and veg in a slow cooker, but here Jason shows you how to roast a chicken (or two), how to strip it for either a roast or daily protein use, then how to create this delicious elixir. For the none meat eaters out there, we also have a recipe for a vegan ‘bone’ broth that has similar properties

Stress-free pot roast

Sundays should be for lazing, which is why Jason has come up with a fab pot roast recipe using our Bone Marrow Broth as a cooking liquor and as a base for a fabulous red wine jus. Simply stick it in the oven, sit back and relax. Fancy a couple of sides? Then try our fabulously Elevated roast potatoes and our super wilted greens to complete your a Super Sunday Lunch.

Elevated Classic: No-fry fish ‘n’ chips

Who would have thought fish ‘n’ chips could be healthy AND tasty! Enjoy this fabulous take on the classic that’s protein packed, full of good fats and bursting with B vitamins thanks to sitting on a base of our wilted greens. (Yes, these are a current favourite of ours!) All put together with the usual skill and panache by Jason.

Chicken liver parfait

Liver is nature’s multivitamin: packed with vitamin A, vitamin C and B vitamins. Many don’t like it’s texture and appearance though, so Jason has converted chicken livers into a simple, super-smooth parfait that will have you begging for more. We use some butter in this dish and if you want to add a new string to your bow, we’ve even come up with a skills video to show you how to make your own. It really is super simple!
