Another sleep-inducing dish is our tuna or cottage cheese (for a veggie option) tartare tian, given both of these elements are high in tryptophan, a precursor of the hormones melatonin and serotonin.
This is a beautifully light dish, perfect as a pre-bed snack or for a light dinner party. If using tuna, please take note: it MUST be pre-frozen to kill histamine bacteria that can cause food poisoning.
Please buy the fish as fresh as possible, then freeze, defrost a little in the fridge (to make it easier to slice) and then serve when fully defrosted. (You can ask your fishmonger for sushi grade tuna to make this easier).

Ingredients
Per person:
100-125g/4-4.5 oz yellow fin tuna pr exchange for cottage cheese for a veggie option
50-75g/ 1.8-2.6 oz ripe avocado
50g/1.8oz BB Tomato Fondue
5tsp crispy onions
1tsp toasted sesame seeds
2tsp pea shoots
1/4 lime wedge
Pinch sea salt
3tsp of suggested aromatics
sesame oil chilli sauce
soy/tamari sauce
mirin/rice wine
Thai basil or coriander *exchange for cottage cheese for a veggie option

Method
Wrap the tuna in cling film and freeze for eight hours
Defrost in the fridge for around four hours and slice and dice as per the video
Once diced, add your choice of aromatic seasonings and allow to stand and infuse while you prepare the avocado
Peel and fine dice the avocado as per the video, add to a separate bowl and season with lime juice and sea salt
Begin to plate using a deep serving ring or a pastry ring, approximately 3 inches or 7.5cm in diameter
Add the tuna (or cottage cheese) first, pressing gently down into the ring, followed by the avocado, again pressing gently to the edges
Finally spoon over the tomato fondue, pushing to the edges, and sprinkle the crispy onions on top
Lift off the ring, garnish with sesame oil dressed pea shoots and serve
