We take these nutritious little nuggets, blanche them in boiling water and toast them in the oven to produce a tasty snack or for use in our wild garlic pesto. They are high in magnesium and potassium that are vital for the body to function properly, and also packed with protein.

Seeds from a butternut squash
A drizzle of olive oil
A sprinkle of sea salt

Method
Pre-heat the oven to 180C/360F (fan) or 200C/390F (convection)
Clean the seeds from a squash, removing as much of the stringy sinew as possible
Blanche in boiling water for around 10 mins to soften
Drain the seeds and place on a baking tray
Drizzle with olive oil and sprinkle with salt
Place in the oven for 3-4 minutes to toast. Beware, they can burn quickly
