A lovely, light dish here for you: a simply steamed piece of sustainably caught cod, accompanied by our sauce choron (based on our lighter Elevated Hollandaise mother sauce), some wilted greens and our pommes boulangère. Cod is super high from a nutrition point of view, often under-rated, especially in the UK where it is seen as a basic option for fish ’n’ chips.
It’s a rich source of protein, heart-healthy omega 3 fats, super low in saturated fats and a good source of both Vitamin B12 (which contributes to your mental health, immune system function, healthy cell division and to reducing tiredness and fatigue) and iodine, an important mineral for thyroid function.

Ingredients
150g/5oz sustainably sourced cod loin
A selection of aromatics: basil, garlic, tomato stems, lemon juice, salt and pepper
2tbsp Elevated Hollandaise sauce
2tbsp BB Tomato Fondue
1 portion Elevated pommes boulangère
1 portion Elevated wilted greens

Method
Pre-prepare the pommes boulangère, wilted greens and Hollandaise sauce as per the instruction videos below
Place a pan of water on the hob, bring to the boil and lower to a simmer
In a bamboo steamer or similar, place your cod and season with salt, pepper and lemon
Add your aromatics to the boiling water and place the steamer on top.
The fish is cooked when it starts to flake or the skin can be removed (around 15 mins)
In the meantime, heat the pommes boulangère and greens
Mix the Hollandaise and Tomato Fondue
Serve the cod with the potatoes and seasonal greens. Drizzle with the sauce choron
