About This Recipe

This simple soused or pickled onion dish can be ready in minutes, but the longer you leave it, the better it will get from both a flavour and nutritional perspective. Over time, the onions will begin to ferment resulting in good amounts of probiotics and digestive enzymes. 


Using a technique from his childhood, Jason has taken heart-healthy onions that are packed with fibre and also contain a substance called quercetin that has been shown to raise healthy HDL cholesterol.

Ingredients

  • 150g/5oz thin sliced red onions on the whole circle 

  • 30g/1oz apple cider vinegar 

  • 3tsp Grade 

  • A maple syrup 

  • 1tsp sea salt crystals

Method

  1. Thinly slice the onions into rounds as per the video

  2. Place in a bowl and dowse with the other ingredients, toss to cover

  3. Cover with film or a plate

  4. Leave for 15-20 mins until the onions start to become tender

  5. Keep in an air-tight jar under the liquid and they will keep for weeks at room temperature
