Cucumbers are mostly water so they can help with hydration levels, plus the skins contain fibre to help keep you regular and avoid constipation. There are small amounts of vitamin K in cucumber and this can help with blood clotting and bone health.
They also contain vitamin A which can help with vision, the immune system and reproduction, while also making sure your heart, lungs and kidneys work the way they should.

60g/2oz apple cider vinegar
60g/2oz Grade A maple syrup
2tsp sea salt crystals

Leaving the skin on, split the cucumber in half lengthways and remove the seeds using a teaspoon
Dice into 5mm (1/4 inch) cubes and set aside.
Whisk all the other ingredients together until the salt dissolves
Pour over the cucumber and leave to stand for 5-10 minutes
