This simple soused cucumber is excellent as an accompaniment to a number of dishes thanks to its balancing elements: sweet and sour, with a cool crunch to provide a light, vibrant side or garnish. 


Cucumbers are mostly water so they can help with hydration levels, plus the skins contain fibre to help keep you regular and avoid constipation. There are small amounts of vitamin K in cucumber and this can help with blood clotting and bone health. 


They also contain vitamin A which can help with vision, the immune system and reproduction, while also making sure your heart, lungs and kidneys work the way they should.

  • 200g/7oz cucumber 

  • 60g/2oz apple cider vinegar 

  • 60g/2oz Grade A maple syrup 

  • 2tsp sea salt crystals

Method

  1. Leaving the skin on, split the cucumber in half lengthways and remove the seeds using a teaspoon 

  2. Dice into 5mm (1/4 inch) cubes and set aside. 

  3. Whisk all the other ingredients together until the salt dissolves 

  4. Pour over the cucumber and leave to stand for 5-10 minutes
