400g/14oz Elevated BB Soda Bread
400g/14oz smoked trout
200g/7oz our roasted beetroot (or other beets)
3tsp fresh horseradish
35g/1oz crème fraîche
4tsp pea shoots

Method
Grate the horseradish and add to the crème fraîche
Under a grill / salamander, toast one side of each of the soda bread slices
Flip over and lay sea trout to cover the untoasted side. Place this back under the grill for 2-3 minutes to cook out. The juices will be captured and soaked up by the soda bread
Serve with the diced beets, the creamed horseradish, pea shoots and a grind of black pepper.
