Souvlaki is the archetypical street food found in Greece, hand-wrapped and eaten while walking around. Ordinarily served with meat, we’ve decided to go for a vegetarian version here using Cypriot halloumi as the protein source.

Souvlaki is the archetypical street food found in Greece, hand wrapped and eaten while walking around. The meat that goes in it can be pork, chicken or in some cases lamb formed into a long, thin meatball like a kofta. We’ve decided to go for a vegetarian version here using halloumi, (actually from Cyprus rather than Greece).
Halloumi is high in calcium and protein and relatively low in fat. Souvlaki is ordinarily wrapped in a white-flour pita bread, but we’ve taken our flatbread dough and added some seeds to up the nutritional content.
We’re offering two options here: one is a ‘modern’ take with char-grilled peppers (a great source of vitamin C and betacarotene – a precursor to vitamins A and K) and wilted greens (high in B vitamins and iron), the other more traditional with fresh organic tomatoes and red onion.

Ingredients
0.5 batch Elevated quick dough
30g/1oz mixed seeds
300g/11oz halloumi
4 large ripe tomatoes
0.5 medium red onion
120g/4.5oz roasted red peppers
100g/4oz wilted greens
60g/2oz tzatziki
30g/1oz salt and dried oregano mixed 50:50

Method
Roast the red peppers and leave to cool (see video link below)
Wilt the greens and leave to cool (see video link below)
Make the tzatziki and leave to stand (see video link below)
Make a batch of Elevated quick dough (see video link below), split half of it and store in the fridge or freezer for later use
Add the nuts to the remaining dough and mix thoroughly, then divide into four equal balls
Roll out the dough to around the size of an old-fashioned ‘single’ record (7-inch diameter)
Slice the tomatoes and onion as per the recipe video
Lightly grease and heat a frying pan and cook the dough to form pitta style breads (two minutes each side should do it). Wrap in a tea towel to keep warm
Slice the halloumi into fingers and fry in the previous pan until golden brown
Assemble the souvlaki as per the recipe video
