There are many salsa verdes around the world and this is our take on this classic tangy accompaniment to all kinds of meat and protein dishes. You can experiment with some of the herbs used, but the one constant is really the parsley, which is a core ingredient.
It’s super high in vitamins A, K and C, while a good source of a number of minerals too: calcium, iron, magnesium, and potassium, the latter two are particularly useful as they aid so many functions in the body, while calcium is important for bone health and iron for red blood cells.
Of the other herbs: mint aids digestion and is full of antioxidants, while tarragon helps stabilise blood sugar levels. Basil brings a host of vitamins and minerals too: A, K and C, plus manganese (which helps the body form connective tissue, bones, blood clotting factors, and sex hormones) and more iron.

100g/4oz flat leaf parsley
5tsp basil or coriander
5tsp dill or mint
5tsp chervil or fennel tops
2tsp salt
50g/1.8oz apple cider vinegar
50g/1.8oz maple syrup
100g/4oz extra virgin olive oil
5tsp garlic
5tsp gherkins
3tsp capers
50g/1.8oz shallots

Method
This will store in the fridge for 2/3 weeks in a Kilner jar
Roughly strip the leaves off the herb stalks
Add all ingredients bar the oil to a food processor or use a stick blender to blitz
Add in the olive oil and blitz again
