In this compound salad we marry two ‘ps’ that go perfectly together: prawns and pea shoots to produce a super-simple light lunch, bursting with flavour and super high in nutrition. Prawns are an excellent source of protein, selenium, vitamin B12 and omega 3 fats which have been shown to be beneficial for protecting against heart disease, Alzheimer’s disease and some forms of cancer.
Pea shoots, meanwhile, are high in vitamins C, E and A, as well as the minerals potassium and phosphorous, flavonoids and vitamin B9 (folate), our hero vitamin in October 2022. In fact, just 100g/4oz of shoots gives around 20% of your recommended daily allowance of this crucial micronutrient.

Ingredients
150g/5oz cooked large tiger prawns
150g/5oz organic pea shoots
75g/2.6oz Elevated croutons
3tsp pistachio (or other nut) pesto
50g/1.8oz organic cucumber pearls
½ lemon zested and squeezed
2tsp EV unfiltered olive oil
2tsp roasted prawn oil (optional)

Method
Make the croutons as per the video below
Toss the prawns in the prawn oil if using and leave to soak for a few minutes
Pearl the washed cucumber as per the video and drop into a large mixing bowl
Zest and squeeze the lemon on to the cucumber (use a sieve to stop the seeds falling into the salad)
Add the olive oil and allow to marinade for 2-3 minutes
Spread/brush pesto onto the croutons and leave to one side
Add the pea shoots and prawns to the large mixing bowl and mix gently together to coat evenly along
Add a dash of salt and black pepper
Build the salad using elements as per the vide
