Once seen as a cheap peasant food, skate is now highly desirable for its light flavour, high protein levels and low saturated fats.
Like other white fish, it does have some omega 3 fats in it and it’s a great source of Vitamin B12, which contributes to your mental health, immune system function, healthy cell division and to reducing tiredness and fatigue. We’ve deliberately kept this dish light and used low-fodmaps ingredients.
Fodmaps are a type of fermentable carb that can trigger IBS symptoms.

Per person:
250g/9oz sustainably sourced skate wing
4tsp olive oil
2tbsp Elevated Hollandaise sauce
1 portion Elevated wilted greens

Method
Pre-prepare the wilted greens and Hollandaise sauce as per the instruction videos below
Pre-heat the oven to 200C/380F (fan) to 220C/430F (convection)
Place the olive oil in a flat-bottomed frying pan and bring to a medium-high heat
Dab the fish dry and place in the oil, sealing each side (around 1.5-2mins per side)
Add a little salt
When both sides are sealed, place in the oven for 8-10 mins until the fish flakes
Serve with the wilted greens and a drizzle of olive oil
