Welcome to a delightful twist on the classic flapjack recipe — our oat, pine nut, and coconut flapjacks. This recipe brings together the wholesome goodness of oats, the rich, buttery flavour of pine nuts, and the tropical sweetness of coconut. 


These flapjacks are not only delicious but also packed with nutrients, making them the perfect snack or breakfast treat. These flapjacks are made with pure ingredients like oats, pine nuts, and coconut blossom sugar, which are all rich in fibre and other nutrients that can aid in digestion. 


Oats in particular are a great choice for anyone with IBS as they contain a type of fibre called betaglucan, which can help reduce inflammation in the gut and improve bowel function. Pine nuts also rich in fibre, healthy fats, and other nutrients that can support overall health. Ingredients

Makes 8 flapjacks 

  • 200g/7oz rolled oats 

  • 150g/5.5oz barista-style coconut milk 

  • 100g/4oz desiccated coconut 

  • 75g/2.5oz coconut blossom sugar 

  • 75g/2.5oz maple syrup 

  • 75g/2.5oz pine nuts 

  • 25g/1oz coconut oil 

  • 2tsp ground cinnamon or nutmeg 

  • 1tsp sea salt

Method

  1. Pre-heat the oven to 180C/360F (fan) or 200C/390F (convection)

  2. Heat the coconut oil in a deep pan and lightly toast off the pine nuts until golden

  3. Add the coconut milk to warm through and remove from the heat 

  4. Stir in all the other ingredients and mix to a warm soft dough

  5. Pour out into small baking tray and flatten out

  6. Place in the oven for around 20 mins until golden 

  7. Allow to cool for 10-15 mins and slice

  8. Store in an air-tight container when at room temperature
