Ingredients
Makes 8 flapjacks
200g/7oz rolled oats
150g/5.5oz barista-style coconut milk
100g/4oz desiccated coconut
75g/2.5oz coconut blossom sugar
75g/2.5oz maple syrup
75g/2.5oz pine nuts
25g/1oz coconut oil
2tsp ground cinnamon or nutmeg
1tsp sea salt

Method
Pre-heat the oven to 180C/360F (fan) or 200C/390F (convection)
Heat the coconut oil in a deep pan and lightly toast off the pine nuts until golden
Add the coconut milk to warm through and remove from the heat
Stir in all the other ingredients and mix to a warm soft dough
Pour out into small baking tray and flatten out
Place in the oven for around 20 mins until golden
Allow to cool for 10-15 mins and slice
Store in an air-tight container when at room temperature
