Here’s our Elevated take on the Italian ‘beef’ classic. Kiwi is surprisingly high in tryptophan that helps support melatonin and serotonin production, as well as rich in vitamin C, antioxidants, and beneficial enzymes.

Here’s our Elevated take on the Italian ‘beef’ classic. Kiwi is surprisingly high in tryptophan, an amino acid that is a precursor to melatonin and serotonin and so helps with sleep, as well as rich in vitamin C, antioxidants, and certain enzymes that are good for respiratory tract infections.


We’re marrying this with a simple dressing of passion fruit and orange juice, with the passion fruit also rich in antioxidants, vitamins and plant compounds that can be beneficial to health.


We’re then topping the dish with either shaved coconut (to imitate parmesan cheese) which is full of good fats and substances with antiviral properties, or shaved almonds, also high in good fats and tryptophan.


The sourness of the passion fruit cuts into the sweetness of the kiwi, adding the coconut / almonds delivers a textural difference. While this is a great sleep inducing dish, it’s also a fab desert for dinner parties.

Ingredients

Per person:

  • 2 ripe green organic kiwis

  • 1 large ripe fresh passion fruit

  • 100g/4oz orange juice

  • 3tsp coconut shavings (or toasted almonds)

Method

  1. Add the fruit juice to a pan and place on a medium heat until reduced by half

  2. See the short skills video (link below) on how to peel the kiwi fruit, retaining as much flesh as possible intact

  3. When the fruit juice has cooled, halve the passion fruit and scrape it into the juice to create a syrup

  4. Slice the kiwis thinly and arrange on a plate, drizzle with passion fruit syrup

  5. Use a speed peeler to shave coconut and arrange over the top of the dressed kiwi (you can use almonds if you prefer)

  6. Finish with microherbs or pea shoots
