We’re using our old friend Brilliant Base Aromatic Nage as the base here and pairing it with seasonal vegetables, including the humble sprout, courgettes, kale and spinach for a super soup that will help blast away colds this winter thanks to high levels of B vitamins, iron and vitamin C.

Ingredients
750g/26oz BB Aromatic Nage
250g/9oz spiralised courgettes
250g/9oz mixed greens such as kale, Swiss chard or cavelo nero
150g/5oz Brussels sprouts
100g/4oz sliced spring onions
80g/2.8oz toasted peanuts
5tsp pomace or avocado oil
Tamari/soy to taste
Chilli sauce/oil to taste sea salt to taste

Method
The key here is to prepare the vegetables first as the cook time is very rapid
Put the BB Aromatic Nage in a large pan and start to warm through while you chop the vegetables
Wash and dry the veg and then chop according to the video
Spiralise the courgette or cut into long, thin strips
Heat a solid bottom large pan with a splash of oil, add the scallions and the sliced sprout hearts first to get some heat going, cook on medium to hot heat. Do not brown/burn – we are just looking to soften down so they have an ‘al dente’ texture
Add in all the remaining greens and cook for 3-4 minutes
Add a pinch of salt to drive some of the water away via steam
Feed in the hot Aromatic Nage, bring to a rapid boil
Serve immediately garnished with toasted peanuts and sweet chilli sauce/chilli oil and tamari/dark soy if preferred
