Start your day with a nutritional bang with our tasty granola that can also double up a sports bar to fuel your exercise. Thanks to its blueberries and cardamom, it is also has anti-cancer properties.

Breaking the overnight fast is probably the most important meals of the day – and this granola (that can also be converted to a sports bar) is a great kickstarter.
Rolled oats give important, gluten-free energy, nuts and seeds pack in a huge amount of good fats and a decent dose of protein and there’s also good amounts of vitamins and antioxidants in the fruit.
One of our favourite combos is blueberries and cardamom – both have their own nutritional benefits but combined they supercharge each other into boosting natural killer cells, one of the immune systems’ big guns against both infectious pathogens and diseases such as cancer.

Ingredients
200g/7oz ripe stone fruits
200g/7oz rolled oats
100g/4oz white flesh nuts
100g/4oz brown flesh nuts
200g/7oz honey (local and raw if poss)
100g/4oz blueberries
75g/2.5oz mixed seeds
1tsp sea salt
2tsp ground cardamom
2tsp orange zest

Method

In a large bowl fold all the ingredients together
As they start to gather into a doughy ball, either press into a baking tray for bars, OR loosely lay spread out on a baking sheet for granola
For the bar bake in centre of oven 180-200C or 360-390F for 30-40 minutes, then remove, cool and cut into appropriate size (50g/1.8oz)
For the granola crunch clusters dry out in centre of oven for 3-4 hours at 80-100C or 180-210F occasionally moving on the tray. Alternatively leave at 50C/120F for 10-12 hours
Once cooled fully, keep both in air-tight containers.
