Greek's famed dip tzatziki is a combination of Greek yoghurt, high in protein and gut-friendly bacteria, garlic with all its antioxidants, cucumber and dill, which over the years has been traditionally used to treat digestive issues.

About This Recipe

James remembers first going to Greece and being told of a dish that had both garlic and yoghurt in it and he would not touch it for life… until he was about 13 and now he still can’t eat it enough. 


Simple to make, more of a kitchen skill than a recipe, it contains Greek yoghurt, high in protein and gut-friendly bacteria, garlic with all its antioxidants, cucumber, and antioxidant-rich dill which over the years has been traditionally used to treat digestive issues, colic in infants, and bad breath.

Ingredients

  • 500g/18oz Greek yoghurt 

  • 1/2 cucumber 

  • 2 cloves garlic 

  • 2 tsp of dried dill or mint 

  • Sprinkle of sea salt 

  • 20g olive oil

Method

  1. Deseed and grate the cucumber into a bowl as per the video

  2. Add a little salt and leave to stand for 2-3 minutes

  3. Squeeze out any excess water 

  4. Fine chop and grind the garlic (see the skills video below) or use a garlic press

  5. Add the grated cucumber, the garlic and the dill to the yoghurt

  6. Add the olive oil 

  7. Mix and leave to stand for around 10 minutes before serving
