200g/7oz small waxy potatoes per person
30-40g/1-1.5oz olive oil
2-3 cloves of garlic
2-3 sprigs rosemary
a pinch of sea salt

Method
Pre-heat the oven to 180C/360F (fan) or 200C/390F (convection)
Wash the potatoes thoroughly and cut lengthways into quarters, sixths or eighths depending on size.
Add to a bowl with the garlic peeled and smashed and the rosemary leaves torn
Give them a good glug of olive oil and toss. Add the salt and toss again
Add to the oven
After 10-12 minutes, gently agitate to redistribute on the tray and pop back in the oven until cooked
