Forget fatty fries or cheerless chips, here Jason shows you how to make an oven chip that retains all its fibre and nutrition, but is still full of flavour. 


By leaving the skin on, you are retaining the fibre and most of the vitamins from the potatoes - which are good sources of vitamin C, vitamin B6, potassium and manganese.

Ingredients

  • 200g/7oz small waxy potatoes per person 

  • 30-40g/1-1.5oz olive oil 

  • 2-3 cloves of garlic 

  • 2-3 sprigs rosemary 

  • a pinch of sea salt

Method

  1. Pre-heat the oven to 180C/360F (fan) or 200C/390F (convection)

  2. Wash the potatoes thoroughly and cut lengthways into quarters, sixths or eighths depending on size.

  3. Add to a bowl with the garlic peeled and smashed and the rosemary leaves torn

  4. Give them a good glug of olive oil and toss. Add the salt and toss again

  5. Add to the oven

  6. After 10-12 minutes, gently agitate to redistribute on the tray and pop back in the oven until cooked
