Our Elevated take on a classic gazpacho takes our Savoury Starter a step further with the addition of rich red peppers and tomatoes. Both of these ingredients contain high amounts of vitamin C so great for boosting the immune system.

About This Recipe

Our Elevated Gazpacho takes our Savoury Starter a step further with the addition of rich red peppers and tomatoes.  


Both of these ingredients contain high amounts of vitamin C – half a cup of red peppers is 1.5 times your daily recommended amount – so great for boosting the immune system, while red peppers are also high in vitamin A that can help with skin and eye health.  


Cumin adds spicy flavour without heat and also includes antioxidants shown to support the fight against cancer, heart disease, and high blood pressure. 


The Jerez sherry vinegar, meanwhile, offers depth of flavour and has been shown to raise 'good' cholesterol (HDL) and lower blood sugar

Ingredients

For the soup 

  • 400g/14oz de-seeded ripe vine tomatoes 

  • 200g/7oz red pepper de-seeded 

  • 150g/5oz BB Savoury Starter 

  • 5g seas salt crystal 

  • 5tsp Jerez sherry vinegar 

  • 5tsp Jerez sherry vinegar 

  • 5g ground cumin 

  • Sparkling mineral water (if needed to help puréing) 

For the garnish (optional)

  • Our soused red onions 

  • Diced chives 

  • Elevated croutons 

  • Drizzle of EV olive oil

Method

  1. In small batches add the ingredients to a high-sheer liquidiser and process into a super-smooth soup base. If it feels too thick, add a splash of mineral water

  2. Strain this through a sieve, adding anything that doesn’t make it through back into the main batch

  3. Repeat the process until all is smooth and there is just a little discardable residue in the sieve

  4. Chill in the fridge and remove for 30-45 minutes before serving

  5. Garnish as per the video
