This is our take on a classic French onion soup but with a real Elevated twist thanks to the addition of one of our Brilliant Base stocks, as well as removing all gluten (bar the optional croutons). It’s low GI so as not to spike blood sugars and tastes delicious!
About This Recipe
French onion soup is an all-time classic, a hearty meal that’s simple to make but can be relatively heavy thanks to the addition of flours and thick melted cheese on top.
We’ve taken that basic recipe, with its heart healthy onions, and used one of our Brilliant Bases (Bone Marrow Broth or Roast Root Vegetable Stock) to enhance for flavour and nutritional value (of course use another stock if you have no BBs to hand), while keeping it with a low glycaemic index (GI) so as not to spike blood sugars.
We’ve also taken out all thickeners to make it gluten free and it is, of course, by its nature vegan/vegetarian depending on which stock you use. We finish it off with our lovely toasted sourdough, with a light grating of gut-friendly Parmesan cheese.

Ingredients
1000g/35oz BB Bone Marrow Broth, BB Roast Root Vegetable Stock or other stock
750g/26oz onions
30g/1oz garlic
2tsp thyme leaves
2tsp olive oil
2 slices toasted sourdough
2tsp parmesan cheese
Salt and pepper to taste

Method
Cut the onions Lyonnaise style as per the Skills Video seen below In a large saucepan, heat the olive oil with a generous pinch of sea salt
Add the onions and gently cook through for 15-20 minutes stirring continuously until they caramelise into a golden brown colour (There is no short cut, no turning up the heat and definitely no adding sugar! The time lapse video doesn’t show the entire effort but it’s so worth doing)
Once the onions have lost 4/5ths of their volume and are deep golden caramel in colour, add the garlic and thyme leaves
Cook for further 2-3 minutes to release their essential oils and background flavour notes
Add the stock of choice, bring to boil and then simmer for 5-8 minutes to infuse flavours
Taste and adjust seasoning Serve with our Parmesan toasted Elevated crostini (see Skills Video below)
