About This Recipe
You can make stuffing from a pack if you wish, but it will never be as good as taking that pack and adding in some elements to Elevate the flavour and nutritional profile or, even better, making your own breadcrumbs, ideally from a sourdough loaf.
Using our Brilliant Base Bone Marrow Broth also adds extra nutrition in a dish usually more associated with Christmas indulgence rather than health-giving properties.

Ingredients
150g/5oz finely diced onion
50g/1.8oz butter
150g/5oz Elevated Bone Marrow Broth or chicken stock
100g/4oz fresh white breadcrumbs
100g/4oz stale dry breadcrumbs
250g/9oz sausage meat
75g/2.6oz grated apple/pear
3tsp fine chopped herbs
75g/2.6oz chopped dried fruits
4tsp chopped garlic
2tsp citrus fruit zest grated
50g/1.8oz dark spirit (brandy/whisky/rum)
50g/1.8oz seeds/chopped nuts/chestnuts
3tsp salt
0.5tsp pepper

Method
Heat the oven to 180C/360F (fan) or 200C/390F (convection)
Sauté the fine diced onions, garlic and chopped herbs in half the butter until softened
Once cool add to all the remaining dry ingredients. Mix together thoroughly, then add the wet ingredients and sausage meat and mix again
Place in pre-greased oven-proof dish and top with rest of butter
Bake for 20-30 minutes until golden brown on top
