Recipe: Courgette pappardelle

Method

When you want you want a quick low-carb dish, this simple courgette pappardelle is a great option. It uses courgette sliced into thin strips with a speed peeler and flash fried using our Brilliant Base Tomato Fondue. Ready in seconds and delicious as a side or a main course.

  1. Wash the courgettes (1.5 per person) and top and tail, then use a speed peeler to cut thin strips, rotating the courgette as you go. Keep the seedy middle bit to add to soups or stews
  2. Warm the BB Tomato Fondue in a separate pan
  3. Heat the olive oil in a deep-based frying pan or wok and ‘flash fry’ the courgette for around two minutes to drive off as much steam as possible
  4. Fold the warm fondue through the courgette
  5. Serve with toasted pine nuts, a drizzle of olive oil and parmesan or nutritional yeast
