Here's our take on piquante chimichurri sauce, often called Argentine barbecue sauce. We use coriander – which has anti-anxiety properties – as the base and elevate it with maple syrup, olive oil and two kinds of hot pepper.

Here's our take on piquante chimichurri sauce, often called Argentine barbecue sauce. We use coriander as the base and elevate it with maple syrup, olive oil and two kinds of hot pepper. 


Jason’s favourite coriander (or cilantro) is an underrated herb, packed with flavour and bursting with antioxidants that make it antimicrobial and anti-inflammatory, while it has also been shown to have anti-anxiety properties too.

Ingredients

  • 100g/4oz fresh coriander 

  • 50g/1.8oz pickled jalapenos 

  • 5tsp red chillies (seeds optional for extra heat) 

  • 50g/1.8oz fresh garlic 

  • 50g/1.8oz spring onions 

  • 50g/1.8oz Grade A maple syrup 

  • 125g/4.5oz organic extra virgin unfiltered olive oil 

  • 1tsp sea salt 

  • Twist of black pepper

Method

  1. Rough chop the coriander to reduce its volume

  2. Rough chop all the other ingredients

  3. Add everything bar the olive oil to a food processor and blast until a coarse paste is formed

  4. Add the olive oil and blast again
