This super-simple BBQ side dish takes portobello mushrooms, high in fibre, vitamin D and immune-boosting betaglucans and marries them with garlic and chillis to steam away and cook in a sieve over the embers of a BBQ.

Ingredients

  • 250g/9oz portobello mushrooms 

  • 3-4 cloves of garlic 

  • 6-8 chillies 

  • 50g/1.8oz fresh coriander

Method

  1. Light your BBQ and allow the charcoal to stop flaming and turn white 

  2. Peel and destalk the mushrooms, slicing them into 0.5 inch strips 

  3. Toss in olive oil and add in the peeled garlic cloves and chillies. Toss again 

  4. Add to a simple sieve and place over the charcoal until steamed through and tender

  5. Sprinkle with fresh coriander to finish.
