Baked brown basmati rice

In this super-simple to make one-pot side dish, we increase the nutritional value of fibre-rich brown basmati rice by cooking it in the oven in either our Bone Marrow Broth or Roast Root Vegetable Stock. Low fuss, high value.

About This Recipe

Basmati rice, originally grown around the foothills of the Himalayas has been a staple of Indian and Pakistani dishes for thousands of years. 


We’re fans of the brown version, thanks to its nuttier taste and the fact more minimal processing means that it retains many of the rice’s original nutritional benefits: high in fibre, a low-glycaemic index to help balance blood sugars and high in B vitamins that can help with energy levels and brain function. 


Cooking rice is ordinarily somewhat of an art form, but we take much of the guesswork out by offering a simple baked way of cooking it that uses either our BB Bone Marrow Broth or BB Roast Root Vegetable Stock to add extra nutritional value.

  • 200g/7oz brown basmati rice 

  • 300g/11oz BB Bone Marrow Broth/BB Roast Root Vegetable Stock 

  • 1tsp salt

Method

  1. Preheat the oven to 180C/360F (fan) or 200C/390F (convection)

  2. In a suitable ovenproof pan with a lid stir all the ingredients while cold

  3. Use a butter packet wrapper or thinly spread some butter on a piece of parchment paper. Use it to cover the pan

  4. Place the lid on and bake in the centre of the oven for 30-35 minutes until all the liquid is absorbed... If the liquid is absorbed and the rice not cooked through, simply add a little more liquid and return to the oven.

  5. Please note, oven temperatures and the rice itself may vary, so allow enough time for this to cook through)

  6. Fork through and serve
