About This Recipe
For far too long fats were demonised to the point where people became fat-phobic. Now we know that ‘good’ sources of fat are essential for life, for everything from the walls of our cells to how we process some vitamins, they are back and this mayonnaise can add them to your meals with a bang.
We’ve used avocados – one of our favourite fruits – that are absolute nutritional powerhouses to create this silky vibrant take on mayonnaise. Avocados are a great source of vitamins C, E, K, and B-6, as well as B2, B3, folate, B5, magnesium, and potassium, as well as beta-carotene, and omega-3 fatty acids.
Although most of the calories in an avocado come from fat, don’t be shy! Avocados are full of healthy, beneficial fats that help to keep you full and satiated – when you consume fat, your brain receives a signal to turn off your appetite. Eating fat also slows the breakdown of carbohydrates, which helps to keep sugar levels in the blood stable.
Apple cider vinegar in this mayo not only adds a kick but is great as a digestive aid too, so ditch the squeezy bottle and get Elevated.
