We all like a sweet treat – and this one is almost guilt free. It uses ripe avocados as the binding ‘good’ fat and flavours the mousse with antioxidant-packed organic cocoa powder, smokey maple syrup, fabulous vanilla and an optional hint of ginger to add anti-inflammatory properties too.
Coconut oil binds everything together, while the dish massively elevates your time – it literally takes less than five minutes to make with an additional 10-15 in the fridge to hold things together.

50g/1.8oz Grade A maple syrup
50g/1.8oz organic cocoa powder
1tsp vanilla extract
1tsp melted coconut oil
Optional: 1 flat tsp ginger powder
