A warming side dish here for Christmas or at any time of year. This carrot and swede crush is bursting with nutrition and a healthy dose of antioxidants: both of the main ingredients here are high in carotene, the precursor to vitamin A.

A warming side dish here for Christmas or at any time of year. This carrot and swede crush is bursting with nutrition and a healthy dose of antioxidants. Both of the main ingredients here are high in carotene, the pre-cursor to vitamin A that is helpful for promoting good vision. It has also been linked with a reduction in the risk of heart attacks and certain cancers, including post-menopausal breast cancer.
  1. Finely chopped both vegetables to open up the surface area so they can cook quicker
  2. Add to a pan and cover with the carrot juice; stir in the nutmeg and sea salt
  3. Cover with a lid and bring to a simmer, then turn down low to cook for 30 minutes
  4. Remove the lid and keep on the hob until 1/2 of the liquid has evaporated
  5. Once all the veg are tender, simply crush with a masher

  • 3tsp sea salt
