About This Recipe
This vegan creamy dressing uses aquafaba – the water from a can of chickpeas – to emulsify with the olive oil to produce a creamy, mayonnaise-style dressing to which you can add a host of aromatics such as those mentioned above. Apple cider vinegar is one of the key ones here as it helps with upper gastrointestinal digestion by giving stomach acid a helping hand.
Additional points to note include antimicrobial and anti-inflammatory garlic and fresh herbs. We’ve made it here with bird eye chillies to give it a peri-peri kick, but if you’d like something milder, feel free to leave these out and it will taste just as good. We use it as a dressing for our carpaccio but over the month’s we’ll show you many uses for it, including as a marinade.
Don’t worry it if seems like a lot: it will keep in the fridge for a good 2-3 weeks.

Ingredients
100g/4oz aquafaba
5tsp chopped garlic
5tsp bird eye chillies
5tsp spring onions
250g/9oz light olive oil
3tsp sea salt
5tsp fresh coriander stalks
5tsp Grade A maple syrup
5tsp lemon juice and zest
2tsp oregano or rosemary
5tsp coarse grain mustard
50g/1.8oz apple cider vinegar

Method
Put the chickpea water plus half the vinegar, oil and mustard into a bowl
Blitz with a stick blender until emulsified and thick with a mayonnaise-style consistency
Roughly chop all other ingredients and blitz again
Add the rest of the liquids and blitz again
If using a high-powered food processor, add all the liquid ingredients at once and blitz, then add the chopped aromatics and blitz again
