Here’s our version of a simple Irish soda bread designed to be super quick and easy to make but also to keep you fuller for longer as it’s denser than regular bread. It’s also high in fibre and yeast free.

Here’s our version of a simple Irish soda bread designed to be super quick and easy to make but also to keep you fuller for longer as it’s denser than regular bread. It’s so easy in fact, Jason taught this recipe to a group of autistic pupils at the school his son goes to and they all picked it up in super quick time. 


We’ve added in wholemeal flour here to increase the fibre content and keep it Elevated. Soda bread is an Irish staple and given it’s yeast free, it’s better for those with yeast intolerances. It will go stale fairly quickly, so eat on the day of baking or toast up to day three.

Ingredients

  • 170g/6oz organic wholemeal flour 

  • 170g/6oz organic self-raising flour 

  • 0.5 tsp salt 

  • 0.5 tsp bicarbonate of soda 

  • 290g/11oz buttermilk

Method

  1. Pre-heat the oven to 200C/390F (fan) or 220C/430F (convection).

  2. Tip the flours, salt and bicarbonate of soda into a large mixing bowl and stir with fork

  3. Make a well in the centre and pour in the buttermilk, mixing quickly with a large fork to form a soft dough. Depending upon the absorbency of the flour, you may need to add a little extra milk if the dough seems too stiff but it should not be too wet or sticky

  4. Turn onto a lightly floured surface and knead briefly

  5. Form into a round and flatten the dough slightly before placing on a lightly floured baking sheet

  6. Cut a cross on the top and bake for about 15-20 minutes until the loaf sounds hollow when tapped underneath, then cool on a wire rack.
