About This Recipe

Here's a super-quick snack or side dish inspired by the Indian continent and a perfect addition to our Curry Club dishes.

Okra (also known as ladyfingers or bhindi) is so often overlooked. Which is strange as it’s a nutrient-dense powerhouse rich in soluble fibre, which helps regulate digestion and stabilise blood sugar levels. It is also an excellent source of vitamin K, crucial for blood clotting and bone health, and vitamin C, which supports immune function and collagen production.  Additionally, it provides magnesium, a vital mineral involved in hundreds of processes in the body, including muscle function and energy production.

The black onion seeds add not only a subtle crunch but also a boost of antioxidants, which help neutralise free radicals and support overall cellular health. A light coating of corn flour enhances crispiness without unnecessary calories, while garlic provides additional immune-boosting benefits.

This dish is light, nutritious, and full of flavour, making it a perfect guilt-free crispy snack or side dish to complement a curry.
