Okra (also known as ladyfingers or bhindi) is so often overlooked. Which is strange as it’s a nutrient-dense powerhouse rich in soluble fibre, which helps regulate digestion and stabilise blood sugar levels. It is also an excellent source of vitamin K, crucial for blood clotting and bone health, and vitamin C, which supports immune function and collagen production. Additionally, it provides magnesium, a vital mineral involved in hundreds of processes in the body, including muscle function and energy production.
The black onion seeds add not only a subtle crunch but also a boost of antioxidants, which help neutralise free radicals and support overall cellular health. A light coating of corn flour enhances crispiness without unnecessary calories, while garlic provides additional immune-boosting benefits.

20 fingers of okra, halved lengthways
Pinch of black onion seeds
2 garlic cloves, sliced
5g / 1 tsp olive oil
½ teaspoon corn flour
Salt and black pepper, to taste

Method
Slice the okra in half lengthways
Place the okra in a bowl and toss with olive oil to coat evenly
Add the garlic and black onion seeds, then toss again
Season with salt and black pepper, then dust lightly with corn flour, tossing until well combined
Preheat the air fryer to 200°C / 400°F
Cook for 8 minutes, or until the okra is crispy and golden
